Crispy Maple Sriracha Brussel Sprouts

Brussel sprouts may be one of my favorite foods of all time. They can easily be incorporated into breakfast, lunch, dinner, and appetizers. Add a little sweet and spicy glaze and crisp em up and they’re perfect. Better yet, they can be quickly and easily whipped up in both an air fryer, or an oven if you don’t have one yet, so you can make them anywhere!

Ingredients:

  • 1 bag of brussel sprouts
  • Olive oil
  • ¼ C maple syrup
  • 1-2 tbsp sriracha (depending on how spicy you prefer it to be)
  • Salt and pepper
  • 1 tbsp garlic powder

Now you make it:

  1. Wash and cut brussel sprouts in half longways and set aside in a bowl
  2. Preheat air fryer or oven to 350 
  3. Coat sprouts in olive oil til they are just barely all covered
  4. If oven baking, microwave brussel sprouts for 5 minutes to precook
  5. Add spices and maple syrup and sriracha and mix until sprouts are covered evenly
  6. Oven- spread out on a baking sheet (cover pan with foil first!!) and bake for 15 min, and then turn on the broiler for 3 minutes, but watch them closely so they don’t burn, especially with the sugar in the maple syrup 
  7. Air fryer- Put half of the mixture in the air fryer for 12 min, pausing halfway to shake them. Once finished, repeat with second half
  8. Top with any remaining glaze when plating
  9. Drool…and then serve immediately

Crispy Chicken Nuggets

            Easy peasy healthy chicken nuggets that cook in no time. Pair them with some Chik-fil-A sauce and you’ve got yourself quite a meal.

Ingredients:

  • 1 lb chicken breast, cubed
  • 1 egg
  • ½ C almond flour (or whatever you have available)
  • 1 tbsp pepper
  • 1 tsp salt
  • ½ tbsp garlic powder
  • ½ tbsp paprika
  • 1 tsp chipotle powder 
  • 1 tsp chili pepper flakes
  • Olive oil spray*
  • 1 C Pickle juice*

Now you make it:

  1. Preheat oven to 400 or air fryer to 370 
  2. Whisk egg in bowl and set aside
  3. Combine flour and dry ingredients in separate shallow dish
  4. Dip chicken cubes into flour, egg wash, and then into flour mixture again, evenly coating both sides
  5. If oven baking- line a baking sheet with foil and then a wire baking rack if available and spread out nuggets evenly. Bake for 6 minutes, flip, and bake for 6 more minutes. Broil for 2 min at the end of the 12 minutes
  6. If using the air fryer- put only half of the nuggets into the tray so they are not overly crowded. Give a good spray of olive oil, cook for 4 minutes, take out to flip and spray liberally again, and cook for 4 more minutes
  7. Serve immediately with sauce of choice, or none at all!

*Olive oil spray is to help crip up the nuggets and avoid dry flour patches once cooked through. I have never sprayed the ones going into the oven but I imagine that it would work the same to help them be crispier. 

* For a easy healthier copycat Chik-fil-A chicken nugget, soak cubed chicken in 1 C pickle juice for 30 minutes before breading
