Chocolate Hazelnut Peanut Butter RX Bars
BIG chocolate fan, especially when its with peanut butter. And ESPECIALLY when its a snack that tastes like dessert.
Ingredients:
- 1/2 C hazelnuts
- 1/2 C cashews
- 1/2 C egg white protein powder
- 1/4 C cocoa powder
- 1/4 C peanut butter, plus TBSP for drizzle
- 1 1/2 C dates
Makes 8 bars
Now you make it:
- Combine hazelnuts and cashews in food processor and blend until nuts are coarsely ground
- Add rest of ingredients in food processor and blend on high for 3-5 minutes until mixture forms a ball and becomes sticky
- Line a baking tray (I prefer a bread loaf pan for the size, but whatever works) with parchment paper and flatten mixture into pan and smooth out
- Warm a tbsp peanut butter in microwave for 15 seconds and using a spoon, drizzle across bars
- Refrigerate til hardened, about an hour or so
- Remove wax paper from tray and cut into bars then individually wrap
- Store refrigerated or in the freezer
