My mom, who passed on her perfectionism to me, taught me that we do not cry in the kitchen when things don’t turn out the way we want them to. New, and sometimes the best, recipes are created by accident, she told me.

And thus, the homemade lemon blueberry RX bar was born.

Partway through doubling the recipe I realized I was not going to have enough protein powder, but instead found some lemon meringue powder my sister had, and decided to give it a go. I love the way it turned out, but if you are not interested in the lemony ~layer of flavor~ simply use 3/4 C of the egg white powder instead.

Ingredients:

  • 1/2 C cashews
  • 1/2 C almonds
  • 1 1/2 C dates
  • 1/2 C egg white protein powder
  • 1/4 C lemon meringue protein powder
  • 1 C dried blueberries

Makes 8 bars

Now you make it!

  1. *If using store-bought dried blueberries skip this step* If dehydrating your own, spread one 8oz package of blueberries on a baking sheet and leave in the oven on 200 for 6 hours
  2. Combine almonds and cashews in the food processor and pulse to fine to course grounds (preference of texture)
  3. Combine rest of ingredients in food processor and blend on high for 3-5 minutes until mixture forms a ball and becomes sticky
  4. Line a baking tray (I prefer a bread loaf pan for the size, but whatever works) with parchment paper and flatten mixture into pan and smooth out
  5. Refrigerate til hardened, about an hour or so
  6. Remove wax paper from tray and cut into bars then individually wrap
  7. Store refrigerated or in the freezer
